I Custodi is joint project between Mario Paoluzi and Mount Etna pioneer Salvo Foti. This cuvee is aged only in steel, which preserves the volcanic minerality and bright citrus tones of the unique carricante grape when planted on Mount Etna. A wonderful introduction to the gorgeous white wines of Mount Etna.
