Very light with fennel and tarragon on the nose, then stone fruits (pear and apple) hit the palate. Great acidity. Perfect in a cocktail paired with some Mexican food.

Produced by Don Ruben in a single distillation. He uses an adobe oven for his roasts and then a hybrid filipino / arabic still. Bottled at 42%, only 750 bottles were produced.
