Home of North America’s first rum distillery, Kill Van Kull is the narrow waterway connecting New York and Newark bays. Starting in 1664, the rum distilled on Kill Van Kull used an early type of molasses made before the invention of industrial centrifuges. This molasses had more sugar, and more plant matter ‘scummings’, resulting in more flavor. As sugar making techniques grew more industrial the available molasses decreased in quality.
