Long before Riesling ruled the German wine landscape, the curious grape Elbling was the most widely-planted grape variety across the country. Thankfully we are seeing a revival of appreciation for the crisp, briny, low-alcohol wines produced from it. Think German Muscadet, and pair this bright, mineral white with oysters, salads, or even club soda (Gespritzt!)
